So, let me tell you about my experience in Santorini. I’ve been here for two weeks now, hoping to find a calm beach to dive, but it has been quite a struggle. Fishing was not easy at all, with the constant waves moving me around and the inability to see the bottom in the deeper zones. It was a struggle to enter and exit, and I may have even broken some bones in the process. Nonetheless, I managed to catch some fish, including a conger which happens to be my mother’s favorite. And let me tell you, when I came face to face with a conger under a rock, I was so scared that I felt like I could walk on water! It moved like a ghost and gave me quite the fright. Unfortunately, throughout my week here, there hasn’t been a single day with calm seas. I had hoped to explore deeper waters in search of groupers, but that seems impossible for now. However, I remain hopeful that the weather will change in the days to come. And hey, look at the catch I have for dinner tonight – a mullet! I’ll cook it up, using the dried fennel twigs I’ve seen by the road in the islands. Those twigs are perfect for making a white fish soup with potato and lots of garlic, finished off with lemon and fennel. It’s going to be absolutely delicious!
